The story goes that on July 4, 1924, Italian immigrant Caesar Cardini found himself in a predicament at his Tijuana restaurant, Caesar's Place. Overwhelmed by Fourth of July revelers, Cardini's kitchen was running low on ingredients. In a stroke of culinary ingenuity, he improvised with what he had on hand: crisp romaine lettuce, zesty Worcestershire sauce, aromatic garlic oil, tart lemons, fresh eggs, and savory Parmesan cheese.

Tossing Up a Show: Caesar's Theatrical Touch

What set Cardini's creation apart wasn't just its unique combination of flavors, but also its theatrical presentation. To demonstrate the freshness and safety of the ingredients during a time of foodborne illness concerns, Cardini prepared the salad tableside. This impromptu show became a draw in itself, enticing even more Americans to cross the border for a taste of Caesar's innovative dish.
